First Course

Sussex Caesar salad – Twineham Grange
cheese & local chicken
      
Smoked fish plate with mint and green chilli jelly
      
A filo cup of mushrooms in a cream and garlic sauce
      
English charcuterie with red onion jam & sun-dried tomato & balsamic vinegar soda bread

Main Course (with hot new potatoes, green salad & choice of 2 salads or 2 hot vegetables from our list). Choose from:
      
Slow roasted pork with apple & elderflower sauce
      
Marinated roast leg of lamb with an English red wine, rosemary and garlic sauce
      
Roasted breast of Guinea Fowl stuffed with lemon & garden herbs wrapped in air dried bacon
      
Roast rib of matured Sussex beef with a red wine gravy and horseradish sauce
      
Or for a supplement of £x.xx per person:
A dressed salmon platter; home baked ham; vegetable flans and either roasted beef or chicken

Our meats are from W J Crouch, butchers at Heathfield; Niall at Bridge Farm on the Sussex/Surrey borders; fish from Paul’s Plaice, Seaford; Admirals Plaice, Hastings; eggs from Stoney Farm, Berwick fruit and vegetables from Upper Dicker; cheeses, milk and cream from The Cheese Man, Portslade, Brighton; ice cream & cream from Downsview, Laughton; herbs and apples from our gardens.
